Combine Wet Ingredients
In another bowl or jug, mix plant-based milk, oil, vinegar, and vanilla. Pour into the dry ingredients and mix until just combined.
4 Add Hot Water
Slowly pour in hot water (or coffee), stirring gently until you get a smooth, pourable batter.
The batter will be quite thin—this is normal.
5 Bake the Cake
Pour the batter into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
6 Cool and Serve
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack. Cool completely before slicing or frosting.
